We present an easy version of a cocktail from our latest drinks list. This is a batch premix that is packed full of tastes of a holiday season, rendering it excellent for your holiday party. Any leftover cordial you can use for morning drinks, desserts, or to mix additional servings of the drink.

The Bikini Cocktail

Serves 10 guests

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (produces 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Place every ingredients inside a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. Next, remove from the burner and leave to cool down fully. Decant into a sealable bottle, seal and store chilled, where it will keep for about a month.

To make Cocktail Base: Combine the specified spirits and syrup into a big jug, allow it to infuse for an hour, then filter it best through a fine cloth, to ensure it's completely strained.

To serve: Measure 85ml of the cocktail base into your mixing glass containing ice, and stir carefully for a minute to cool it down. Pour into a cold coupe glass or similar, garnish with the cranberries and finish using a light spray of mandarin oil above the glass.
